The complex carbohydrates, such as the legumes and the grains, contain longer chains of sugar molecules. As a result, the body takes a longer period of time to absorb the sugar. As a result, your body obtains more energy, and the side effects of the sugar are not very high.
The simple carbohydrates, on the other hand, are not very beneficial for the body. They contain simple sugars, which the body can absorb in no time. The higher the sugar content, and the lower the fiber content is, the worse the carb is for the body.
Vegetables and fruits are also simple carbohydrates, as they contain basic sugars, but unlike sweets for example, they have different effects on the body. Fruits and vegetables have lots of fibers, while sugars do not. Because of the high fiber content, fruits and vegetables do not cause so much damage on the body.
Fiber slows down the digestion of the sugars, and as a result, the sugars are not very damaging for the body.Because of this, it is important to limit the intake of sodas, candy, white rice, bread, or pasta, potatoes, and sugar.
You can eat these carbs, but not in excess. Also, if you have no alternative, the way in which you cook them is important as well. Bake the potatoes instead of fry them, for example.
Use the Glycemic Index as Guidance
Complex carbohydrates are different, as they do not release the sugar in the body in an instance, but over a long period of time. It is advisable to eat complex carbs instead of simple ones. This means eating brown rice or pasta instead of their white counterparts, and so on.
Read the labels before you buy a certain type of food. Eating complex carbs will satisfy your hunger for a longer period of time, so this is an extra reason why you should eat them. People who suffer of diabetes should eat only complex carbs, for obvious reasons.
The glycemic index is very important, and if you look over a glycemic index list, you will see that there is a big difference between the complex and simple carbs.
