Salad Recipes – Greek Salad – Mediterranean Salad
To prepare three-four generous Mediterranean Salad servings you need four tablespoons of balsamic vinegar, four tablespoons of cold water, a teaspoon of salt, a teaspoon of sugar, all this for the salad dressing.
You also need an onion, three bell peppers (different colors if you want a colorful salad), a large cucumber, a thick slice of feta cheese (150 grams/0.35 lbs), four tablespoons of olive oil, salt and some black pepper.
Start by preparing the salad dressing. Mix the cold water and balsamic vinegar, salt and sugar, until they finally melt completely. Chop onion into suitable pieces.
Put the salad dressing over onions. Onions must sit in the salad dressing for at least 40-50 minutes.
Chop the bell peppers as you like. Chop the cucumber and cut feta cheese into pieces.
Put the chopped bell peppers, cucumber and feta cheese into layers in a large bowl. Strain the marinade and place onions over the other vegetables.
Keep only half of the sauce (dressing) used for marinating the onions. Add the oil over the salad dressing and flip it over the vegetables. Put some salt and freshly ground black pepper.
Cover the Mediterranean Salad with plastic foil and let it in a cold place at least one hour before serving.
You can add in the Mediterranean Salad a handful of green olives and tomatoes (cut into large pieces), but just before serving.
Depending on your taste and imagination, you can also add fresh herbs. Best fits are fresh tarragon and thyme, but the salad will have a very special flavor if celery or lovage is used.
