Barbecued Thai chicken legs

Ingredient list:

  1. 4 chicken legs
  2. fresh coriander or parsley
  3. 2 sticks of lemon grass
  4. zest and juice of 2 limes
  5. 1 green chilli, deseeded
  6. 2 tablespoons of oil
  7. a thumb-sized piece of ginger, grated
  8. cloves of garlic, after your taste, peeled

Start by washing the chicken very well and, after you dried it, slash it with a knife. Pick the coriander leaves and put them away. Now comes the essential, easiest and fun part of the dish. Put the stalks of the coriander to a food processor with the rest of the ingredients and make a paste. You’re almost there. Rub the paste into the slashes and all over the chicken legs. Then place the chicken in a bowl to marinate and leave the bowl in the fridge for at least 30 minutes.

Time is up. With skin side down, fry the chicken legs into a pan or onto a grill (or if u have a grilling pan is even better), turning now and then, until the meat is cooked through and crispy brown on the outside. Sprinkle the coriander leaves over to serve.

The fresh green will delight the eyes and the taste as well, do not neglect it! You can garnish with whatever you find in the house, sweet or simple potato, carots, boil or roast or maybe a simply fresh salad. Anyway, it will be a gorgeous meal.
